Taiwanese Wonton Noodle Soup

To make classic wonton noodle soup at home in 30 minutes, prepare a savory pork and shrimp filling, wrap it in wonton skins, and boil them alongside fresh thin egg noodles and bok choy. Serve everything together in a hot, seasoned chicken or bone broth. [1, 2, 3, 4, 5]

Ingredients and Prep

  • Wonton Filling: 8 oz ground pork, 8 oz peeled shrimp (chopped), 1 tsp light soy sauce, 1 tbsp oyster sauce, 1/2 tbsp sesame oil, 1/2 tsp chicken bouillon, 1/4 tsp white pepper, and 1 chopped green onion.

  • Wrappers: 1 pack of thin wonton wrappers.

  • Noodles & Veggies: 15 oz fresh thin egg (wonton) noodles and 12 oz bok choy.

  • Broth & Seasoning: 4 cups chicken bone broth, 1 tsp sesame oil, grated garlic, ginger, soy sauce, and white pepper. [1, 2, 3, 4, 5]

Making the Wontons

  • Mix the pork, shrimp, soy sauce, oyster sauce, sesame oil, and spices in a bowl until sticky.

  • Place 1 teaspoon of filling in the center of a wonton wrapper.

  • Wet the edges with water, fold the wrapper in half to seal, and pinch the corners together into an ingot shape. [1, 2, 3]

Cooking and Assembly

  • Boil a large pot of water. Cook the fresh wonton noodles for 45 to 60 seconds, dip them briefly in cold water for a chewy texture, toss with a little oil, and place them into serving bowls. [1, 2]

  • Blanch the bok choy in the boiling water for 1 minute, then remove. [1, 2]

  • Drop the wontons into the boiling water. Cook for 4 to 5 minutes until they float and the filling is fully cooked. [1, 2]

  • Heat your chicken broth with garlic, ginger, and soy sauce. Assemble the bowls by adding the cooked wontons, bok choy, and hot soup over the noodles. [1, 2]
