ChickenFeet Soybeans

Chicken feet cooked with soy sauce is a very popular Asian dish (Chinese dim sum style or Vietnamese chân gà kho xì dầu). The key is cleaning the feet well and slow braising so the skin becomes soft and flavorful.


Below is a simple, restaurant-style recipe you can cook at home.


Ingredients


  • 1 lb (450 g) chicken feet

  • 3 tbsp soy sauce

  • 1 tbsp dark soy sauce (for color, optional)

  • 1 tbsp oyster sauce

  • 1 tbsp sugar

  • 4 cloves garlic, smashed

  • 3 slices ginger

  • 1 star anise

  • 1 small chili (optional)

  • 1 cup water or chicken broth

  • 1 tbsp cooking oil

  • Green onions for garnish


Step 1 – Clean the Chicken Feet



  1. Cut off the nails.

  2. Wash with salt + vinegar or lemon.

  3. Rinse well.

  4. Boil for 3–5 minutes, then rinse again.


👉 This removes smell and impurities.


Step 2 – Fry (optional but makes better texture)



Heat oil and lightly fry the chicken feet for 3–5 minutes until slightly golden.


This step makes the skin more wrinkled and absorbs sauce better

Step 3 – Make the Soy Sauce Braise


In a pot add:


  • garlic

  • ginger

  • star anise

  • soy sauce

  • oyster sauce

  • sugar

  • dark soy sauce

  • water


Bring to a boil.



Step 4 – Simmer


Add chicken feet and cook:


  • Low heat: 30–40 minutes

The sauce should become slightly thick and sticky.


Step 5 – Finish

Taste and adjust:


  • more soy sauce = saltier

  • more sugar = sweeter



Add green onion before serving.
